Fido Pickler Fermenter (0.5 - 5 litre)

  • $26.00

Made in Italy the fido jars are very good quality, lead and BPA free, strengthened glass with excellent seals and superior quality wire bales. The cheaper jars which are made in China look fairly similar but simply can not compare with a genuine Fido jar.  All jars have wide openings for tidy, easy filling.

Choose which size fido jar you want - 1 litre to 5 litre available:

1 litre: 10cm x 10cm x 16.5cm (high)
1.5 litres: 10cm x 10cm x 22.5cm (high)
2 litres: 12cm x 12cm x 22cm (high)
3 litres: 14cm x 14cm x 24cm (high)
4 litres: 16cm x 28cm (high)
5 litres: 17.5cm x 28cm (high)

These jars come fitted with a silicone grommet and an airlock and are similar to the Pickle-It or the Probiotic Jar. Using these airlocks will help keep your veggies in an anaerobic environment while they are culturing thereby helping to eliminate mould and spoilage problems while creating the ideal environment for all the good probiotic bacteria.

We recommend purchasing a viscodisc plus a glass weight with these jars in order to ensure that your ferment is kept under the brine at all times.   The regular size viscodisc is a better option for the 1 and 1.5 litre jars.  The wide mouth viscodisc is a better option for jars 2 litres and upwards in size.   We have two different glass weights which fit into fido jars.   For the smaller jars the weck weights are adequate but for the larger jars we would recommend either a heavier Handmade glass weight or multiple weck weights.

It is important not to overfill your jars especially when making sauerkraut which heaves/expands.   In general if you fill your jar to the shoulder where it starts to narrow that is about right.   Additional brine is produced during the first week of sauerkraut fermentation and it will find its way up into the airlock if the jar is overfilled so please leave the recommended amount of headspace.   For veggies in brine/beet kvass etc it is OK to fill the jar slightly more than this as they will not expand the same way that sauerkraut does.
