Fido Fermenting Equipment
Italian made fido jars are excellent quality, lead and BPA free, strengthened glass with superior seals and quality wire bales. The cheaper Chinese made jars look fairly similar but simply can not compare with a genuine Fido jar. All jars have wide openings for tidy, easy filling
The Boss Pickler or water airlocks provide a completely anaerobic environment i.e. less chance of contamination/mould, lower histamine ferments and no burping required. Save $$$ by purchasing some fidos without airlocks and swop the lids over when your ferment is ready to go into the fridge.
It is important to leave approx 1/5 headspace i.e. fill to where the shoulders of the jar start to narrow. 800g shredded vegetable per litre normally works out pretty well.
Don't forget to add some glass weights and viscodiscs to your order as it is important to ensure that your vegetable is submerged under the brine. Small Weck weights can be used in 0.5L and 1L size fido jars. Heavier weights are preferable in the larger jars. We also recommend using viscodiscs under the glass weights for better coverage (regular viscodiscs for jars up to 1.5L and wide mouth viscodiscs for the larger fido jars. For chunky vegetables in brine you won't necessarily need a glass weight as the viscodiscs are perfect for keeping your veggies submerged.
