2 x Weck Jars.

One jar fitted with airlock and the second jar comes with a snap on storage lid.  Ferment in the first jar and when your ferment is ready to go into the fridge replace the airlock lid with the snap on storage lid.   Your airlock lid is then free to use on the second jar.   Using this method you can always have a jar of sauerkraut in the fridge for consumption and your next batch will be fermenting on the bench.

Weck jars are of the highest quality, heavy duty glass and contain NO BPA (Bisphenol A), lead, mercury or cadmium.  Glass lids preclude issues with rusting and chemicals. 

The fermenting valve effectively provides an airlock, allowing gases to vent naturally from your jar without your intervention, which can introduce harmful yeasts or excessive oxygen to the fermenting product.

Directions for Use

Check that the seal in the lid is intact.  Insert the airlock into the rubber hole on the lid, being careful not to push too hard.   Do not push the airlock too far down - the bottom of the airlock should not be sitting in any liquid so if the bottom of the airlock is level with the underside of the lid this is perfect.

Fill the jar with the food you are fermenting and leave about 3cm headspace.   Ensure that the brine covers the food but still leaves head space at the top.  For some food you may wish to weigh down the food with a fermenting weight (sold separately) so that it stays submerged beneath the liquid.

Remove the top off the airlock and add water to about half way up the airlock. Replace the top on the airlock.   Secure the glass lid with the metal clamps.

Once the product is fermented remove the lid with the airlock and replace with a storage lid such as the Keep Fresh storage lid.   Alternatively remove the water airlock and place a silicone bung in the grommet to ensure the jar is air tight.    Your ferment should now be placed in the refrigerator.
